Show your tummy some serious loving this pancake day, as it's falling the same week as Valentine’s Day! I thought I’d conjure up a pan-tastic (I love a pun) recipe fit for pancake day, and valentines day combined ;-) this recipe loves your tummy by being (wait for it); High fibre, Low FODMAP, lactose free, gluten free and includes 1 and a half of your 5-a-day! Jujst finished muching them for my breakfast, and they were scrummy!
Serves 4
Ingredients:
For the Pancakes:
2 bananas
2 medium eggs
4 heaped tbsp gluten free flour
2 heaped tbsp ground linseeds
300ml hazelnut milk
1 tsp baking powder
1 tsp vanilla essence
0.5 tsp salt
For the topping:
2 tbsp nutella
100 ml hazelnut milk
240g strawberries
Method:
Mash the banana in a large mixing bowl, until as smooth as possible.
Add the milk, eggs, and vanilla essence, then whisk well.
Add the flour, ground linseeds, baking power and salt and whisk further until well mixed and smooth. Set to one side.
Melt the Nutella in the hazelnut milk in a pan over a low heat for 2/3 minutes
Cook up the Pancakes (1 ladel makes 1 pankcake, 2 pacakes per serving), serve drizzling over the sauce and top it off with 80g sliced strawberries.
